Preparation instructions
- Thaw in a cold room for around 24h.
- To serve in chunks:
- Open the bag and break up into chunks while cold.
- Set the cooking juice aside for other uses.
- Incorporate the beef chunks into your recipe and reheat.
- To serve pulled:
- Water bath: Put the bag in simmering water (70°C/160°F) for 15 to 20 minutes.
- Press on the bag to pull the chunks apart. Open the bag, drain, and set the cooking juice aside.
- Incorporate some cooking juice back into the product until the desired texture is obtained.
