Pork cheeks trimmed and whole, cooked sous-vide at low temperature in duck fat and seasoned with just salt and pepper. Incredibly tender, with a melt-in-your-mouth texture. Can be enjoyed either hot or cold. Shreds easily and tolerates overcooking. Easy application for multiple uses.

Preparation instructions
  1. Thaw in a cold room for around 24h.
  2. Reheat using the method of your choice:
    1. Water bath: Put the bag in simmering water (70°C/160°F) for approx. 20-25 minutes.
    2. Steam oven: 20-25 minutes at 70°C/160°F.
